Ingredients you'll need

  • 125g Asian noodles
  • 2 tbsp oil
  • 1 tsp curry powder
  • salt
  • 1 tsp red curry paste
  • 2 tbsp light soy sauce
  • juice of half lime
  • 2 tbsp sugar
  • 60ml water
  • bunch fresh cilantro and mint
  • 1 cucumber smashed and sliced
  • coconut flakes and peanuts
  • fried onions
  • Let's get cookin'

    1. Cook noodles according to package, rinse with cold water
    2. Mix with oil, curry powder, salt. Bake at 200C for 25mins
    3. For dressing: mix curry paste, soy sauce, lime juice, sugar, water
    4. Add crispy noodles, mix with dressing in bowl
    5. Serve in salad cups with herbs, cucumber, coconut flakes, peanuts, fried onions.
