Ingredients you'll need

  • 3 carrots washed
  • oil and salt
  • 2 tbsp oil
  • juice of 1 lemon
  • 2 tbsp white wine vinegar
  • salt
  • 1 tsp smoked paprika
  • Let's get cookin'

    1. Drizzle carrots with oil and salt
    2. Bake at 180C/350F for 45mins
    3. Optionally remove skin, cut into thin slices
    4. Carefully combine with oil, lemon juice, vinegar, salt, smoked paprika
    5. Refrigerate couple hours or overnight
    6. Will last in fridge 3-4 days.
