Ingredients you'll need

  • 1 small onion
  • 1 clove garlic
  • 1/2 eggplant
  • 1/2 can (100g) cooked lentils
  • 1 tbsp tomato paste
  • balsamic vinegar
  • 1 tsp dried Italian herbs
  • salt and pepper
  • 200g chopped tomatoes
  • 4 lasagna sheets
  • 4 tbsp vegan cream cheese
  • vegan parmesan
  • Let's get cookin'

    1. Chop and sauté onion, garlic, eggplant until softened
    2. Add lentils, tomato paste, deglaze with balsamic vinegar
    3. Add herbs, salt, pepper, chopped tomatoes. Simmer 10mins
    4. Preheat oven to 190C/375F
    5. Layer sauce on bottom of baking dish then lasagna sheet sauce vegan cream cheese repeat
    6. Finish with vegan parmesan on top
    7. Add water to corners if too dry
    8. Bake 30mins.
