Ingredients you'll need

  • 250g mushrooms
  • 1/2 tsp ginger powder
  • 1/2 tsp garlic powder
  • 3 tsp teriyaki sauce
  • handful fresh cilantro
  • 6 sheets rice paper
  • 2 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 5 tsp sugar
  • 1/3 cup (80ml) water
  • chili oil
  • crispy onions
  • Let's get cookin'

    1. Fry mushrooms until liquid is gone
    2. Add ginger garlic powder, teriyaki and cilantro
    3. Dip rice paper in cold water, add filling, roll like burrito, brush with oil
    4. Steam 5-6min or microwave 1-2mins
    5. Mix soy sauces sugar and water for sauce
    6. Garnish with chili oil and crispy onions.

This ingenious hack makes these delicate rice noodle rolls possible in just 25 minutes – using simple rice paper! Instead of spending hours rolling out the dough, the rice paper is briefly moistened, topped with a spicy mushroom filling, and rolled like a burrito. The mushrooms are first fried until golden brown until all the moisture has evaporated – this creates an intense umami flavor with teriyaki, ginger, and garlic. After 5 minutes of steaming or 2 minutes in the microwave, the rolls are perfect. The sweet soy sauce with chili oil and crispy onions completes the Asian feel. Perfect for hot summer days! 🌸
