Ingredients you'll need

  • 1 small carrot
  • 1 clove garlic
  • 1 small onion
  • spring of thyme
  • spring of rosemary
  • 625ml veg stock
  • pinch of salt
  • 1/2 lemon juiced
  • pinch of sugar
  • 1 serving vegan tortellini
  • sun dried tomatoes
  • vegan parmesan
  • basil
  • Let's get cookin'

    1. Roughly chop vegetables and herbs sauté in oil
    2. Add stock and salt simmer 30mins
    3. Remove herbs, blend some vegetables with broth until creamy, return to pot
    4. Add lemon juice, sugar, salt and tortellini
    5. Cook until tortellini are done
    6. Serve with sun dried tomatoes, vegan parmesan and basil.
