One of favorite quick lunches inspired by Turkish lahmacun but simplified and full of protein!

Ingredients you'll need

  • 100g smoked or firm tofu
  • 1 tbsp tomato paste
  • 1 tsp each paprika cumin
  • 1/2 tsp garlic powder
  • salt parsley cilantro
  • 1 wrap
  • 1/3 small cucumber
  • 2 small tomatoes
  • parsley and lemon juice
  • sriracha mayo
  • Let's get cookin'

    1. Grate tofu in bowl
    2. Mix with tomato paste, paprika, cumin, garlic powder, salt, parsley, cilantro
    3. Press on wrap, fry in oil 4-5mins each side
    4. Mix cucumber, tomatoes, parsley, lemon juice
    5. Add to wrap with sriracha mayo. Roll and enjoy.
