Pasta dish inspired by Turkish manti dumplings, taking the inside flavors to the outside. Features spiced lentils, tangy yogurt sauce, and aromatic tomato butter.

Ingredients you'll need

For the lentil mixture

  • 1 onion
  • 2 cloves garlic
  • 200g cooked brown lentils
  • drained (or smoked tofu)
  • 1 tsp chicken spice blend
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt to taste.

For the pasta

  • 2 servings short pasta.

For the yogurt sauce

  • 200g unsweetened vegan yogurt
  • Juice of 1/2 lemon
  • Salt to taste
  • 1 tsp dried mint (optional)
  • 1 clove garlic
  • minced.

For the tomato butter

  • 2 tbsp vegan butter
  • 1 heaped tbsp tomato paste
  • 1 tsp paprika

Let's get cookin'

  1. Sauté onion and garlic in oil until fragrant
  2. Add lentils, chicken spice, cumin, paprika, and salt
  3. Fry and stir well
  4. Cook pasta according to package instructions, reserve pasta water
  5. Mix vegan yogurt with lemon juice, salt, mint, and minced garlic
  6. Melt vegan butter, add tomato paste and paprika
  7. Cook on medium heat
  8. Gradually add pasta water to create a sauce
  9. Assemble on plates with pasta, lentil mixture, yogurt sauce, and tomato butter
