For the noodles

  • 200g firm tofu
  • 75g flour
  • Pinch of salt.

For the peanut sauce

  • 1 heaped tsp peanut butter
  • Juice of 1/2 lime
  • 1 tsp soy sauce
  • 1 tsp maple syrup
  • 1 tsp sriracha (optional)

Let's get cookin'

  1. Crumble tofu in a bowl and knead with hands until it forms a dough (or use food processor)
  2. Add flour and salt, knead until smooth dough forms
  3. Divide into 10 pieces and roll into noodle shapes (keep them shorter to prevent breaking)
  4. Cook in salted boiling water until noodles float to the top
  5. For sauce: mix peanut butter, lime juice, soy sauce, maple syrup, and optional sriracha
  6. Drain noodles and toss with peanut sauce
