Ingredients you'll need

For the pasta

  • 3 large handfuls spinach
  • 12 tbsp flour
  • Pinch of salt.

For the pesto

  • 3 large handfuls spinach
  • 1/2 bunch cilantro or parsley
  • Salt and pepper to taste
  • 30g cashews
  • 2 tbsp olive oil
  • Juice of 1/2 lemon

Let's get cookin'

  1. For pasta: blend spinach, flour, and salt until dough forms
  2. Knead a few times by hand and cover while making sauce
  3. For pesto: blend spinach, herbs, salt, pepper, cashews, olive oil, and lemon juice until creamy
  4. Bring pot of salted water to boil
  5. Cut pasta dough into water using scissors
  6. Cook until pasta floats to top
  7. Scoop out pasta and mix with pesto in pan
