Ingredients you'll need

For the falafel mixture

  • 1 can chickpeas
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro
  • 1 clove garlic
  • 1 tsp cumin
  • 1 tsp ground coriander
  • Salt to taste
  • 1 tbsp lemon juice
  • 2 tbsp flour.

For the tahini sauce

  • 1 tsp tahini
  • 1/2 tbsp lemon juice
  • 1 tbsp maple syrup
  • Salt to taste.

For assembly

  • 2 flatbreads
  • Cucumber and tomato for filling

  1. Blend chickpeas, herbs, garlic, spices, salt, lemon juice, and flour until paste forms
  2. Mix tahini sauce ingredients
  3. Smash falafel mixture onto flatbreads
  4. Fry in oil for a few minutes until golden brown
