For the salad

  • 3 large carrots
  • peeled
  • 1/2 tsp chili flakes
  • 1 tsp salt
  • 1 tsp ground coriander
  • 2 tsp sugar
  • 2 tbsp lemon juice or vinegar
  • Garlic (measured with your heart)
  • 30ml hot oil
  • Handful fresh cilantro

Let's get cookin'

  1. Shred or peel carrots into thin ribbons
  2. Mix with chili flakes, salt, ground coriander, sugar, lemon juice, and garlic
  3. Heat oil until very hot and pour over carrot mixture
  4. Add fresh cilantro and mix well
  5. Serve immediately or refrigerate for a few hours for optimal flavor development
