Ingredients you'll need

For the stir fry

  • 1 clove garlic
  • Thumb-sized piece ginger
  • 1 carrot
  • 1 small leek
  • 100g tofu (optional)
  • 80g wraps
  • chopped
  • 1 tsp curry powder
  • Salt to taste.

For the sauce

  • 3 tbsp coconut milk
  • Juice of 1/2 lime
  • Pinch of sugar.

For serving

  • Cilantro

Let's get cookin'

  1. Chop garlic, ginger, carrot, leek, and optional tofu
  2. Sauté everything in oil until fragrant
  3. Add chopped wraps and toss with vegetables
  4. Add curry powder and salt
  5. Stir in coconut milk, lime juice, and sugar
  6. Mix well on medium heat, adding water if too dry
  7. Serve with cilantro and extra lime juice
