Ingredients you'll need

For the salad

  • 1 cucumber
  • 1/2 pointed cabbage

For the green goddess dressing

  • 1 bunch parsley
  • 1-2 cloves garlic
  • 3 tbsp olive oil
  • 1 tbsp agave or maple syrup
  • 1 lemon, juiced
  • salt and chili flakes to taste
  • a handful of nuts (cashews recommended)
  • a little water to thin

Let's get cookin'

  1. Wash and prepare cucumber and pointed cabbage.
  2. Finely dice both cucumber and cabbage into small, uniform pieces.
  3. Place diced vegetables in a large bowl and set aside.
  4. For the dressing, add parsley, garlic, olive oil, agave, lemon juice, salt, chili flakes, and nuts to a blender.
  5. Add a little water to help blend and process until smooth and creamy.
  6. Taste and adjust seasoning as needed.
  7. Pour the green goddess dressing over the diced vegetables.
  8. Toss everything together until well coated.
  9. Serve immediately with pita chips or crackers.
  10. Store in refrigerator for up to 3-4 days - it won't get soggy!
