Ingredients you'll need

For the tofu sticks

  • 400g firm tofu
  • 2 tbsp soy sauce
  • 2 tbsp white vinegar
  • 2 tbsp maple syrup
  • 2 tbsp hoisin sauce.

For the broth

  • 1 onion
  • 3 cloves garlic
  • Thumb-sized piece ginger
  • 600ml water
  • Handful lime leaves (optional)
  • 1 tsp gochujang (or 1 tbsp red curry paste)
  • 1 tbsp soy sauce
  • Juice of 1 lime
  • 1 tbsp sugar
  • 3 tbsp canned coconut milk.

For assembly

  • 4 servings noodles
  • Marinated cucumber (1 tbsp each soy sauce
  • vinegar
  • sugar
  • 2 cloves garlic per cucumber)
  • Fresh cilantro

Let's get cookin'

  1. Cut tofu in half, score, and mix with soy sauce, vinegar, maple syrup, and hoisin sauce
  2. Bake tofu at 200°C/400°F for 25 minutes, brushing with glaze frequently
  3. Sauté onion, garlic, and ginger in oil for a few minutes
  4. Add water and lime leaves, simmer 5-10 minutes
  5. Add gochujang, soy sauce, lime juice, sugar, and coconut milk
  6. Simmer 10 minutes more
  7. Cook noodles according to package directions
  8. Serve broth with noodles, glazed tofu, marinated cucumber, and cilantro
