Ingredients you'll need

  • 300g gnocchi
  • 300g mixed vegetables (frozen or fresh)
  • 200g tofu of choice
  • 1 tbsp red curry paste
  • 200ml canned coconut milk
  • 150ml water
  • Juice of half a lime
  • Salt to taste
  • Toppings:
  • Cucumber, sliced
  • Fresh cilantro
  • Lime wedges
  • Other toppings of choice
  • Let's get cookin'

    1. Add all main ingredients (gnocchi, vegetables, tofu, curry paste, coconut milk, water, lime juice, and salt) to a pot.
    2. Cover and simmer for about 5 minutes.
    3. Stir well until everything is combined.
    4. Top with cucumber, cilantro, lime, or any other desired toppings.
