Ingredients you'll need

For the soy chunk bolognese

  • 150g soy chunks
  • 400ml water
  • 3 tbsp soy sauce
  • 2 tsp chicken seasoning (optional)
  • 2 onions, finely chopped
  • 4 cloves garlic, finely chopped
  • few tbsp oil for sautéing
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 tbsp tomato paste
  • 2 tbsp balsamic vinegar or red wine
  • 3 cups (750ml) tomato sauce
  • salt and pepper to taste
  • 2 tsp dried Italian herbs
  • 100-200ml water

For assembly

  • 250g-300g lasagna sheets
  • vegan mozzarella or cheese for topping

Let's get cookin'

  1. Cook soy chunks in water with soy sauce and optional chicken seasoning until water has evaporated. Set aside.
  2. Heat oil in a large pan and sauté finely chopped onions and garlic until fragrant.
  3. Add diced carrots and celery to the pan and fry for 4-5 minutes.
  4. Add tomato paste and cook for another minute.
  5. Deglaze the pan with balsamic vinegar or red wine.
  6. Add the cooked soy chunks, tomato sauce, salt, pepper, and Italian herbs.
  7. Add 100-200ml water and let simmer for 5-10 minutes until sauce thickens.
  8. Preheat oven to 190°C/375°F.
  9. Layer lasagna sheets and sauce alternately in a baking dish until all ingredients are used.
  10. Top with vegan mozzarella or cheese.
  11. Bake for 30 minutes until golden and bubbling.
  12. Let rest for 5-10 minutes before serving.
