Ingredients you'll need

For the biftekia

  • 200g firm tofu
  • crumbled
  • 1 small onion
  • grated
  • 2 cloves garlic
  • grated
  • Large handful parsley
  • chopped
  • Large handful mint
  • chopped
  • 3 tbsp tomato sauce
  • 6 tbsp flour (chickpea flour for gluten-free)
  • Salt and pepper to taste
  • 1/2 tbsp red wine vinegar

Let's get cookin'

  1. Mash and combine all ingredients until well mixed
  2. Shape into 8-10 balls
  3. Fry in oil until golden brown on all sides
  4. Serve with vegan tzatziki and lemon potatoes
  5. Store fried balls in freezer for up to 3 months
