Ingredients you'll need

  • 400g firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp oil
  • 2 tsp cumin
  • 1 tsp paprika
  • salt
  • 1 onion
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 2 tbsp tomato paste
  • 1/3 cup (80ml) pineapple juice
  • 1/2 tbsp soy sauce
  • bunch cilantro
  • 2 cloves garlic
  • 4 tbsp vegan yogurt
  • 4 tbsp vegan mayo
  • 1/2 lemon
  • 1 tsp cumin
  • 1 tsp agave
  • salt
  • tortillas
  • fresh veggies
  • Let's get cookin'

    1. Pat tofu dry, shred with grater
    2. Toss with soy sauce, oil cumin, paprika, salt
    3. Bake at 175C/350F for 30mins stirring occasionally
    4. Fry onion and garlic until soft, add spices, tomato paste, roast 2-3mins, add pineapple juice, soy sauce, bubble then stir in tofu
    5. For salsa verde: blend cilantro, garlic yogurt, mayo, lemon, cumin, agave, salt until smooth
    6. Serve in tortillas with veggies and salsa.
