Ingredients you'll need

For the onions

  • 6 large onions.

For the filling

  • 190g red lentils
  • Bunch of parsley
  • chopped
  • 3 cloves garlic
  • chopped
  • 3 tbsp tomato paste
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tbsp pomegranate syrup or agave
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/4 tsp cinnamon.

For the cooking liquid

  • 550ml water
  • 3 tbsp tomato paste
  • 1 tbsp lemon juice
  • 1 tbsp agave
  • Salt to taste
  • 1 tsp paprika
  • 1 tbsp olive oil

Let's get cookin'

  1. Preheat oven to 200°C/400°F
  2. Cut ends off onions, make lengthwise cut to center, boil 15 minutes
  3. Mix red lentils with all filling ingredients
  4. Carefully separate onion layers when cool enough to handle
  5. Fill each layer with 1 tbsp filling and roll into pockets
  6. Place in baking dish
  7. Mix cooking liquid ingredients and pour over onions
  8. Cover and bake 30 minutes, uncover and bake 10-15 minutes more
  9. Serve with garlic yogurt
