Ingredients you'll need

  • 1 red pepper halved and deseeded
  • 1 small onion halved
  • 1 clove garlic
  • oil salt pepper
  • 1 tbsp tahini
  • 1 tbsp tomato paste
  • Italian herbs
  • pasta water
  • squeeze of lemon (optional)
  • 1 serving pasta
  • vegan parmesan
  • Let's get cookin'

    1. Drizzle pepper, onion and garlic with oil, salt and pepper
    2. Roast at 200C/400F for 20mins
    3. Add to blender with tahini, tomato paste, herbs, pasta water and optional lemon
    4. Blend until smooth
    5. Cook pasta al dente
    6. Combine pasta and sauce in pan and serve with vegan parmesan.
