Ingredients you'll need

  • 2 cloves garlic minced
  • thumbsize piece ginger
  • 1 tsp each cumin, ground coriander, curry powder
  • 1/2 tsp paprika powder
  • chili (optional)
  • 2 tbsp tomato paste
  • 200g red lentils (1 cup)
  • 300ml canned coconut milk
  • 300ml water
  • salt
  • juice of half lime
  • cilantro
  • lime
  • naan
  • Let's get cookin'

    1. Sauté garlic and ginger in oil
    2. Add spices and tomato paste. roast briefly
    3. Add red lentils. coconut milk. wate.r salt and lime juice
    4. Mix well, cover and simmer on medium heat 15-20mins
    5. Serve with cilantro, lime and naan.
