Ingredients you'll need

  • 300g green beans
  • 100g bean sprouts
  • 1 cup (150g) peanuts
  • 2/3 cup (80g) shredded coconut
  • 1 chili
  • 2 lime leaves
  • 2 shallots
  • 3 cloves garlic
  • 1 tbsp light soy sauce
  • sugar
  • juice of 1 lime
  • Let's get cookin'

    1. Blanch green beans and bean sprouts few minutes
    2. Roast peanuts and coconut until browned
    3. Blend chili, lime leaves, shallots, garlic with splash of water
    4. Fry paste in 1 tbsp oil, add soy sauce, sugar, lime juice
    5. Add nuts back. Mix
    6. Combine veggies and nut-spice mix and serve.
