Ingredients you'll need

For the kofta

  • 340g potatoes
  • 400g firm tofu (2 blocks)
  • 1 tsp garam masala
  • 1 tsp chili flakes
  • Salt to taste
  • 2 tsp garlic powder.

For the sauce

  • 1 onion
  • 2 cloves garlic
  • Thumb-sized piece ginger
  • 1 tsp chili flakes
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 2 tsp garam masala
  • 400g canned tomatoes
  • Salt to taste

For finishing

  • Lemon juice
  • Vegan cream
  • Pinch of sugar

Let's get cookin'

  1. Cook potatoes until fork tender, then mash
  2. Knead mashed potatoes with crumbled tofu, garam masala, chili flakes, salt, and garlic powder
  3. Shape into small balls and fry in oil (or bake at 175°C for 20 minutes)
  4. For sauce: sauté onion, garlic, and ginger
  5. Add all spices to the pan and cook briefly
  6. Add canned tomatoes and salt, simmer 10 minutes
  7. Blend sauce until smooth, finish with vegan cream, lemon juice, and sugar
  8. Add koftas to sauce and serve with rice or chapati
