One of my favorite dishes of all time! A hearty vegan lasagna with soy chunks and rich tomato sauce. So happy my mom and I veganized this together and managed to come up with teh perfect recipe over time.

Ingredients you’ll need

150g soy chunks; 400ml water; 3 tbsp soy sauce; 2 tsp chicken spice (optional); 2 onions; 4 cloves garlic; 2 carrots; 2 stalks celery; 3 tbsp tomato paste; 2 tbsp balsamic vinegar or red wine; 3 cups (750ml) tomato sauce; salt and pepper to taste; 2 tsp dried Italian herbs; 100-200ml water; 250g-300g lasagna sheets; vegan mozzarella or cheese
